Certified Great EVOO Content!

We’re Certified Olive Oil Sommeliers

Our commitment to promoting extra virgin olive oil (EVOO) is backed by more than just passion. The main authors of this blog—Alicia & Vijay Shroff—are Certified Olive Oil Sommeliers, accredited by the Olive Oil Times Sommelier Certification Program.

What Does It Mean to Be a Certified Olive Oil Sommelier?

Becoming a Certified Olive Oil Sommelier is about mastering the complex world of EVOO production, flavor profiles, and quality assessment. The certification involves extensive training in sensory evaluation, which teaches sommeliers how to detect positive qualities like fruitiness, bitterness, and pungency, as well as defects such as rancidity or fermentation. Sommeliers are experts in distinguishing between high-quality oils and those that don’t meet the mark.  The certification also includes education on olive oil cultivation, harvest timing, milling processes, and the impact of different olive varieties on flavor.
