Easy Pici Pasta Recipe!

Ingredients (*available at Olive Ovation)
14 oz. of pici pasta (or any thick pasta)*
4 tablespoons of high-quality Extra Virgin Olive Oil (EVOO)*
2 cloves of garlic, thinly sliced*
1 teaspoon of crushed red pepper flakes (optional, for some heat)
1 tablespoon of finely chopped fresh parsley (optional)*
½ cup of grated Parmesan cheese*
1 teaspoon of Parmesan truffle salt*
Freshly ground black pepper, to taste
Extra Parmesan and a drizzle of EVOO for serving

Instructions:
Cook the Pasta:
Bring a large pot of salted water to a boil. Add the pici pasta and cook according to the package instructions, or until al dente. Reserve about ½ cup of the pasta water, then drain the pasta.
Prepare the Garlic Infused EVOO:
In a large skillet, heat the EVOO over medium heat. Add the sliced garlic and cook until golden and fragrant, about 1-2 minutes. Be careful not to burn the garlic.
Combine Pasta and Sauce:
Lower the heat and add the cooked pici pasta to the skillet with the garlic-infused EVOO. Toss to coat the pasta evenly. If needed, add a splash of the reserved pasta water to help the sauce coat the pasta better.
Add Seasonings:
Sprinkle in the crushed red pepper flakes (if using), truffle salt, freshly ground black pepper, and Parmesan cheese. Toss well to combine until the cheese melts slightly and everything is well incorporated.
Serve:
Transfer the pasta to serving bowls, sprinkle with additional Parmesan, a drizzle of EVOO, and chopped parsley for a fresh touch.
