Honey Olive Oil Dressing Recipe
Ingredients:
- 1/3 cup Extra Virgin Olive Oil (for a fruity, mild flavor, use a Koroneiki (Frutta) or Arbequina (Eleganza) variety*
- 3 tbsp honey*
- 2 tbsp apple cider vinegar (or fresh lemon juice for a citrusy twist)*
- 1 tsp Dijon mustard*
- Salt* and pepper to taste

Instructions:
- In a small bowl or jar, whisk together the honey, vinegar (or lemon juice), and Dijon mustard until smooth.
- Slowly drizzle in the olive oil while continuing to whisk, ensuring the dressing emulsifies.
